Scaled, cleaned, and ready for the pan or the oven, Dover Sole is an easy fish to cook the favorite seafood of people who don't like seafood.

Our chef says:

Also known as plaice, flounder, and fluke, this fish is hard to get wrong, that's why you see it on so many menus! Its flavour is sweet and mild, so it pairs well with other mild flavors so as not to overpower the delicate aromas.

I'd portion this fish in to 4 fillets and pack each portions on its own sheet foil.  Top each fillet with dry white wine, a knob of butter, salt, pepper and a finely chopped fresh herb like chervil, marjoram, or chives.  Then I'd loosely seal each packet of foil and throw it on the grill, steaming the fish in it's own juices like en papillote.  Serve the packets on a plate with tender stem broccoli or asparagus. pPerfection!
